GAME NOW IN SEASON

Butcher David Lishman is a true champion of Great British Game – now widely available in the shop.

A member of a local shooting syndicate, David remains keen to dispel the myth that shooting is a “snob sport.”

He explains: “Our own shoot has builders, a farmer, a fishmonger, a photographer, a panel beater, surveyor, medical professor, lawyer and dentist. We are in it for the love of the sport and the countryside - our bags are small and all the birds we take are for home consumption.”

Lishman’s Butchers also sources delicious game for customers’ own tables. “They often tell us that they appreciate the choice of game we can offer, that it makes a really very refreshing change,” says David.

“All game birds have their own unique textures and tastes and they are all free range - probably the most natural meat available in this country.

“It costs around £25 to rear a pheasant, yet our customers can eat them at around £4 a bird, so they represent exceptional value. The same philosophy applies for most game birds.

“It should also be remembered that shooting is also about creating and maintaining the natural habitat in which wildlife can live. It is extremely beneficial to the whole of nature.”

Most of Lishman’s game is presented in pre-packed trays for both convenience and hygiene purposes.
